This role requires a seasoned hospitality professional with proven experience opening new restaurants in NJ/NY. The ideal candidate understands the operational, financial and regulatory challenges.
The General Manager will oversee all operations including staffing, financial management, inventory control, service standards, and guest experience — ensuring excellence from pre-opening through sustained success.
Key Responsibilities
Oversee and manage all areas of the restaurant, making final decisions on operational matters
Lead the successful opening of GAO Cuban Bistro, minimizing delays and keeping the project timeline on track
Recruit, train, and develop FOH and BOH leadership teams
Ensure compliance with NJ health codes, labor laws, and all federal/state/local regulations
Maintain strict adherence to food safety standards (ServSafe required)
Oversee financial reporting, payroll, invoicing, budgeting, and cost control
Control food, beverage, labor, and supply costs to optimize profitability
Work closely with ownership and corporate leadership on purchasing and provisioning
Supervise portion control and preparation levels to minimize waste
Ensure consistent high-quality food and service standards
Maintain a professional restaurant image, including cleanliness and appearance standards
Provide exceptional guest service and resolve complaints effectively
Qualifications
MUST have experience opening new restaurants
Experience in Cuban, Latin, or Mexican-themed concepts preferred
Strong background in financial reporting and operational management
ServSafe Certified (required)
Proven leadership skills with the ability to build and motivate high-performing teams
Strong understanding of NJ restaurant regulations and compliance standards
